Aioli Burger hit the streets only two and half years ago and what started as an idea for a truck called Flip Side became a delicious sensation we’re happy to see expanding. Aioli Burger is run by three friends, Chef Tom, Kyle and Michael. While Chef Tom was on the East Coast finishing up culinary school, Kyle and Mike suggested to him that they start a food truck here in Phoenix. Chef Tom was not keen on the idea as he had always worked fine dining and never pictured himself on a food truck. It was during a visit, that the three friends went to First Friday and checked out the food truck scene. That sealed the deal for them because Chef Tom saw an opportunity to do something different with a food truck by using more traditional techniques with the food they could prepare.
As I chat with Chef Tom and Kyle, the tell me how the whole process has been a learning experience. They mention that they never expected to get to this point so quickly. What began as a five-year plan, has come to fruition quicker than they expected. At five years they expected to have their second truck but at 2 and a half they have three trucks and a storefront opening on Tuesday the 18th. They also filled me in on the location and how it has special meaning to them. The three of them grew up in the area that the restaurant is opening in. They went to Shadow Mountain High School, their parents all live in the neighborhood still and it’s the parking lot they use to hang out in. It’s one of those things that appears meant to be, everything is coming full circle.
Personally, we got our first taste of Aioli burger a couple years ago at the Scottsdale Culinary Burger Battle. The burger they showed off for the night won our vote and apparently most of everyone else’s votes too because they won best burger. They followed that win with another win at Devoured this year with the same burger, the Italiano Burger. You’ll be able to score that burger at the restaurant and on their food trucks, if you can book them. This year alone the guys did 120 weddings and if you want them to do your private events, better get booking, they fill up fast! So what’s the difference between the trucks and the restaurant? Not only are they able to create menu items that they can’t execute on the truck, they’re incorporating the community into the restaurant. They have a dog-friendly patio and you can order the Bow Wow Trio for your four-legged friends, while you enjoy a burger and roasted farm veggies. They’ll also be doing a burger competition each month. Come in and write down an idea for a burger. The guys will select two of the best ideas and those burgers will go on the menu. At that point, if you order those burgers, you get to choose which one you liked the best and vote. The winner will move on to the next month as champ and you’ll get lots of delicious swag if your burger is picked as the winner.
