Big fluffy pancakes are a weekend kind of thing but you can often find them being cooked up on a weekday in our house too. I have a little helper and we have a truly easy and vegan recipe that we use. This can easily be switched to non vegan but we have to use things like flax milk and vegan butter because my little guy is allergic to dairy. I truly do prefer recipes that can be switched around without any worry. Add some of this, add some of that and it still tastes fantastic! Usually we do a plain pancake but I was craving something a tad different so we popped some bananas and pecans on top.
Super Easy Pancakes (even a toddler can make them)
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup almond milk (or any milk substitute)
- 2 tablespoons vegetable oil
- 1 large egg
First, I heat my grill up and then I put all the dry ingredients together in a bowl. I then whisk the almond milk, oil and egg together. Add dry ingredients to the milk mixture and whisk until wet, do not over mix. Once the grill is hot I either add oil to it or I use the vegan butter to make sure those pancakes don’t stick. Use as little or as much batter to create the size pancake you desire. When the first side is almost done and nice and bubbly, this is when you can add your banana slices and pecans. Flip those babies over, finish cooking them, add some maple syrup and enjoy.
