It’s summer and I have been obsessed with broccoli slaw and coleslaw, I eat this or a version of it at least once a day, sometimes twice. It never gets boring because it’s so easy to switch up. It’s refreshing during this summer heat and it’s so easy and healthy (considering I’d rather be eating ice cream to cool down). You can pick up a bag of broccoli slaw from any grocery store, I get mine from Trader Joe’s, Sprouts or Fry’s. You can also use a bag of coleslaw, if you prefer.
Here’s the newest version I’ve been whipping up in the kitchen. Enjoy!
- 1 package (12 ounces) broccoli slaw
- 1/2 cup raisins
- 1/2 cup cashews or any nut or seed for crunch
- 1 tablespoon white vinegar
- 1/4 cup light mayonnaise
- 1/2 teaspoon poppy seeds
- salt and pepper
Mix the mayo, vinegar, poppy seeds, salt and pepper together and add it to the broccoli slaw. Toss in the raisins and cashews, give it a good mix and voila, you’re good to go.
