I’m about three weeks into this baby boot camp thing and my little #azfoodiebaby is changing like crazy every day. He’s getting those chub rolls down good, he’s squawking like a champ, his little arms and legs kick with authority and he lifts his neck up to see the outside world as if his life depends on it.
I still don’t sleep much but I’m amazed at how well I function, I truly thought I was going to be a hot mess, like a big hot tired mess. On this particular day I’ve been by myself with #azfoodiebaby and he has not let me put him down. He even decided to test out his lungs for a good hour, falling asleep for a minute in my arms only to awaken again to continue testing them out.
After about 4 hours of these fun shenanigans, I had two choices:
1. Lose my mind.
2. Bake something.
The second choice sounded a bit more appealing at the time. So into a baby carrier #azfoodiebaby went and I started dicing up some granny smith apples. I’m not trying to bake something intricate and time consuming, especially while carrying a baby around and I have to use what’s available in the house at that time. Leftover apples a friend had brought, granola and ice cream, doesn’t get much more simple than that!
Caramelized apples with Granola topping
- 4 Granny Smith apples
- 2 tablespoons butter or margarine ( I used coconut butter)
- 4 tablespoons brown sugar
- ice cream
Peel the apples and cut into quarters. Remove the cores and cut quarters into 1/2″ thick slices.
In a large skillet, heat the butter until it is bubbling.
Add the apple slices to the skillet and continue to cook over medium high heat for approximately 5 minutes or until tender crisp and beginning to brown. Turn several times to brown evenly.
Add the brown sugar and continue to cook until sugar has melted and started to caramelize and the apple slices are tender.
Top with your favorite granola and a scoop of ice cream!
