I have been having such a great time experimenting with new products in my kitchen. And let me just tell you, this pancake experiment was everything I could have hoped for and more. First of all, not only is breakfast my favorite food genre (yes, I consider it a genre), but peanut butter comes in as one of my top food groups (yes, I also consider peanut butter a main food group). I teamed up with PB Americano to bring you the best of both worlds today. PB Americano gets all of their nuts right here in the United States (support local!) and all of their flavors are 100% gluten free! I used their Dark Chocolate flavor (100% of the proceeds from this flavor go to the Fund for the Americas organization) to make these addictive pancakes, and I couldn’t have said it better myself, “with only 4g sugar and proceeds benefitting poverty reduction programs in 19 American countries our Dark Chocolate PB is both better for you AND the world you live in”.
Dark Chocolate PB Americano Pancakes
Makes 8 pancakes
- 2 cups of your favorite pancake mix
- 2 eggs, room temperature
- 1 cup milk
- 8 tbsp. Dark Chocolate PB Americano
- syrup optional
Preheat a griddle or large skillet over medium heat.
In a large bowl, whisk together the pancake mix, eggs, and milk. Once your cooking surface is nice and hot, begin to pour your pancake batter onto the hot griddle. Use a 1/4-cup measuring cup to pour 8 small pancakes. Then use a tablespoon to add 1 tbsp. of the dark chocolate PB Americano the the center of each pancake.
Using the remaining batter, pour a bit of the pancake mix to cover the tops of the pancakes, covering all of the PB Americano.
Once the underside of the pancake is nice and golden brown, carefully flip the pancakes to cook the second side. Once the second side is gold brown, remove the pancakes from the heat and serve warm with optional syrup.
