Is it Possible to be a Fitness Foodie?

Mexican food, infamous for calorie -loaded, fat-oozing entrees, seems like an impossible fare to devour lightly. Quickly crashing into diet destruction within minutes of receiving the first basket of chips, it is definitely a familiar, indulgent dine-out to most. My first Fitness Foodie Assignment—Can you eat Mexican and stay on track with your fitness goals? SOL Cocina Mexican Restaurant at Scottsdale Quarter makes Mexican not only a doable, healthy meal out, but can prepare tasteful, guilt-free options that are definitely not reminiscent of biting into a dry, tasteless, naked taco, that practically sticks to your throat… Yes, I have had many!
Shortly after being seated to our cozy, dimmed-lit table, server Gio lent assurance that most entrees on the menu, which are Baja-coastal inspired, can be tailored to suit even the most discriminating, health-conscious customer. Definitely heard that before, at many restaurants, but how will it taste? He insisted that I sip on the Organic Slim Margarita, while checking out the menu, which was amazing… Casa Noble certified organic Blanco tequila, fresh lime juice, agave nectar and a splash of soda. A far cry from the bland, soda-loaded skinny margaritas I’ve had elsewhere.
A trio of house made fresh salsas soon arrived with fresh, fried tortillas that I quickly opted to replace with sliced cucumbers. My craving was simple… fresh fish, SOL entrée, Wild Fish on Esquites, was hard to miss on my glance over; Local wild fish with almond- lemon crust, on grilled sweet corn esquites with tomato, basil, fresh lime, epazote-avocado butter, scallions & cotixa cheese. Red flags to the fit-conscious: Crusted, butter, cotixa cheese.
Fitness-friendly directions for the chef:
1- Grill fish, rather than pan-fry
2- Prepare and plate with sauce on the side
3- Cheese on the side
The outcome was surprisingly delicious. The portion tremendous, brought half of the fish home, which was loaded with a clean lime flavor and grilled to perfection, without a slight taste or hint of feeling calorie stripped or recipe deprived. With the sauce and cheese in the side, calories and taste can be easily adjusted with each and every bite.
Not a fish-lover and you are looking for a more familiar, traditional Mexican choice with a healthy twist? SOL has more than two-dozen varieties of street and specialty tacos, all loaded with fresh ingredients. Fitness favorites to look out for; Chicken Garlic Mezcal, Grilled Shrimp, Filet Combo and sweet and savory vegetarian option… Sweet Potato and Black Bean. Fitness-friendly ordering tip for all tacos; Sauces on side, cheese on side, corn tortillas instead of flour, if gluten-sensitive.
If chef directing is not your thing, feel free to try healthier options on the menu that do not require altering, such as Ceviche, which is fresh, raw fish, marinated in lime juice, cilantro, jalapeno pepper and red onion, topped with fresh avocado… Insane!
The grilled Kobe beef is outstanding. Super lean and cleanly plated with a green tomatillo sauce, or grab one of their enormous salads, such as the Mexican Chop or the Ensalada Del Sol, loaded with tons of fresh vegetables, Mexican-style ingredients such as corn, pico de gallo, grilled shrimp, chipotle chicken, black beans and request the dressing and cheese on the side.
Fitness Foodie Rating =10 Sol Cocina gets a 10 for fitness-ease of ordering, chef’s willingness to flex from preparation of house recipes, freshness and quality of vegetarian ingredients, wide-range of grilled lean proteins, fish and seafood and overall taste and flavor, despite eliminating or omitting ingredients and condiments from descriptions on menu.
