It’s only right that I keep the healthy eating spirit going this month, especially since Superbowl food and Valentine’s Day candy is coming up. I’m still thinking about our local Grassroots Kitchen and Tap dining with owner and Chef Chris Collins. This restaurant is frequented by regulars and once you try their food, you’ll become one too. If you aren’t as lucky as we were to meet the passionate and kind Chef Collins, just know that his love of food and finding you the best food to eat, is clearly portrayed on the what he puts out on that plate.
Let’s start the eating: first to our table was light and fresh Tuna Poke full of shrimp, avocado, scallions, jalapeno, cilantro, agave ponzu and wonton chips. Skip the chips and enjoy the protein and avocado for an even healthier starter. I know this isn’t an ocean town but let me tell you honestly that their Poke is amazing, try it!
A lunch that I could eat on a weekly basis and Chef tells us that many people do is the Scottish Salmon and farmer’s vegetable chop. It’s a lightly grilled filet accompanied by a chop salad full of green cabbage, red beets, grapes, butternut squash, corn, radishes, cherry tomatoes, scallions, english cucumber, edamame, feta cheese, basil, parsley and a drizzle of champagne-vinaigrette. I love this salad, in fact, I’m going to eat one today.
Maybe you’re a vegetarian or you just like to eat your veggies for lunch. The farm to table vegetable platter is nothing to smirk at, you get local heirloom tomatoes & bleu crumbles, sautéed kale, thick grilled asparagus, green beans with tapenade and honey-drizzled texas toast.
If you decide to hit them up for dinner, the spit fire chicken is a healthy and hearty choice. They brine that chicken for hours, cooked until succulent and crispy and then they place it atop this magnificent piece of bread drenched in the chicken juices. This is food that you can truly feel good putting in your body, not just because it’s healthy but because you know it’s fresh or as fresh as it can be. Trust us, one try at Grassroots and you’ll be hooked too!
