Pointe Hilton Squaw Peak Resort has appointed Rebecca Tillman as executive chef at the all-suite resort located in Phoenix.
With an approach to food that is simple, back-to-basics and focused on local seasonal ingredients, Tillman will oversee culinary operations for the resort and its dining outlets, including Rico’s American Grill and the historic BBQ smokehouse Hole-In-The-Wall. In her new position as executive chef at the resort, Tillman has also become the only female Executive Chef at a Phoenix resort.
We got the pleasure of sampling some of her simple, yet exquisite dishes from Rico’s American Grill and the Hole-In-The-Wall.
To start we had the Squaw Peak Chopped Salad, which has Rico’s garden lettuce (yes, there is a garden outside of the restaurant that you can see from the patio), grilled chicken, roasted corn, pico de gallo, black beans, avocado, cotija cheese, toasted pumpkin seeds and chile-lime vinaigrette. This was a beautifully fresh and light salad, perfect for a hot summer day.
The farm burger was also amazing and cooked to perfection with Arizona black angus beef, heirloom tomato, avocado, arugula, basil goat cheese, Jones Dairy Farm bacon and a fried egg on top of that! It’s pictured above.
