Opening in Scottsdale on Monday, September 26, Wally’s American Gastropub (7704 E. Doubletree Ranch Rd., 480-596-7978) is a fresh new twist on a longtime Valley favorite. Previously known as Wally’s American Pub ‘n Grille (and now owned by Wally’s son, Christopher Collins), the new Wally’s American Gastropub features a fresh-yet-familiar look and a chef-crafted menu combining the best classic Wally’s dishes with modern takes on all-American pub favorites.
Wally’s American Gastropub is just the latest addition to the Valley-based Common Ground Culinary, a fast-growing collection of neighborhood restaurants and bars. Led by chef/owner, Christopher Collins, Wally’s American Gastropub joins existing Common Ground Culinary restaurants, Grassroots Kitchen & Tap in Phoenix and Scottsdale, and Twisted Grove Parlor + Bar in Scottsdale. Plus, Common Ground is proud to announce plans to open an all-new concept, a gourmet ice cream shop, later this year (with additional details to follow shortly). As for the original Wally’s American Pub ‘n Grille in Phoenix, it is not a part of Common Ground Culinary and will continue to be independently operated by Wally Collins.
“I literally grew up in the kitchen of my father’s restaurants,” says Common Ground Culinary’s, Christopher Collins, “so no one knows better than me how Wally’s brings people together for great food and drinks served in a friendly atmosphere. But we felt it was important to evolve with today’s diners by incorporating tasty new recipes and farm-fresh ingredients into Wally’s menu of classic pub dishes.” Most important, Collins says, “we’ve kept all your longtime Wally’s favorites, from the daily soup specials and the signature S’Macs (skillet mac and cheese), to the Classic Meatloaf and the Root’s Baby Back Ribs, while adding exciting new options like house-made pastas, shareable starters and several gourmet new Evening Entrées available after 5pm.” Menu highlights include Wally’s famed Salt & Pepper Crispy Calamari (buttermilk marinated and now served with San Marzano red sauce); hand-pulled Common Ground Mozzarella with crispy pancetta; a fork & knife Meatball Grinder; fork-tender Short Rib Roast with a 12-hour sauce reduction; and White Chocolate Bread Pudding.
Furthermore, putting the pub in Wally’s American Gastropub, Common Ground Culinary’s new Beverage Director, Shea Provencal has overseen an expanded selection of craft beer, wine and cocktails. “Wally’s has always been known for its globe-straddling collection of beer, wine and spirits, but now we’re offering more craft and locally made beer and wines, as well as a top-notch collection of craft cocktails.”
